Horse gram(Kulthi bean/Hurali/Madras gram)is a reddish-brown, small disk-shaped lentil from south India. It is the best source of protein, loaded with dietary fiber, vitamins, and minerals and is low in calories, which makes it an amazing food for everyone, especially for the ones who are watching their weight.

Sprouted grains and legumes are claimed to be higher in nutrients and more easily digestible than unsprouted varieties. Sprouted horse gram may be available in the market where you live. But it is very easy to make at home.

Horse Gram is nutritiously dense, especially in its sprouted form. So here is an easy, healthy and tasty Karnataka style Hurali sambar, with sprouted horse gram, that can be served with Muddhe or Chapathi and Steamed Rice.

Ingredients

  • 2 ½ cups Sprouted Horse Gram
  • 1 Tbsp Oil
  • ¼ tsp Mustard Seeds
  • Few Curry Leaves
  • ½ Large Onion
  • 2 Large Potato (quartered)
  • 2 Brinjal (quartered)
  • 4 cups Water
  • Salt (to taste)

For Masala Paste :

  • 4 Garlic
  • 1 inch Ginger
  • 1 inch Cinnamon
  • 3 no. Cloves/Laung
  • 1 Tbsp Coriander Powder
  • 1 tsp Chili Powder
  • ½ cup Fresh Coconut
  • 1 Tomato (roughly chopped)
  • ½ Onion (roughly chopped)

Instructions

Preparation :

  • To make Sprouted Horse Gram: Rinse and soak 1 cup dry Horse gram overnight. Drain and keep in a warm place for sprouting. Once sprouted it is ready to make curry.
  • To make masala paste for Sambar: In a mixer add in garlic, ginger, cinnamon, cloves, coriander powder, chili powder, coconut, onion, and tomato. Grind to a smooth paste and keep aside.

INSTANT POT METHOD :

  • Turn on InstaPot to SAUTE mode. Once hot, add oil, mustard, curry leaves, onion, and saute until onions are translucent.
  • Add in the Sprouted Horse Gram and saute for 2-3 mins.
  • Next, add the ground masala paste and saute for about 2-3 mins.
  • Add 4 cups of water, potato, and brinjal. Mix well.
  • Close Lid of InstaPot and turn the valve to SEALING.
  • Press CANCEL button, turn on MANUAL mode(High-Pressure), Set timer to 20 minutes.
  • Wait for Natural Pressure Release(NPR) and open lid. **BE CAREFUL OF THE HOT STEAM**
  • Serve Hurali Saaru with Muddhe or Chapathi and Steamed Rice.
  • Healthy Hurali sambar is Ready to Relish!!

INDIAN PRESSURE COOKER METHOD :

  • In a pressure cooker heat oil, add in mustard, curry leaves, onion, and saute until onions are translucent.
  • Add in the Sprouted Horse Gram and saute for 2-3 mins.
  • Next, add the ground masala paste and saute for about 2-3 mins.
  • Add 4 cups of water, potato, and brinjal. Mix well.
  • Close Lid and pressure cook for 3 whistles.
  • Once the pressure goes down, serve Hurali Saaru with Muddhe or Chapathi and Steamed Rice.

Notes

  • You could make this sambar without sprouting HorseGram, just after soaking overnight. But sprouted grains and legumes are claimed to be higher in nutrients and more easily digestible than unsprouted varieties.
  • Adding brinjal is optional, could be skipped as per choice and taste.
  • Horse Gram should be soft after cooking but, if still uncooked cook for 1 or more whistles. -The same recipe works for Kadle kaalu(Black Chana dal) Sambar, but cooking time will be more for Black chana.
