Ingredients

To Grind

  • 1 Raw Mango (grated)
  • ¼ cup Fresh Coconut
  • 4 to 5 Green Chili

To Powder

  • 1 tsp Cumin / Jeera
  • ½ tsp Mustard Seeds
  • ¼ tsp Methi Seeds

To make mango rice

  • 4 tsp Oil
  • ½ tsp Mustard Seeds
  • 1 tsp Chana Dal
  • 1 tsp Urad Dal
  • few Curry Leaves
  • 2 dry Red Chili
  • ¼ cup Peanuts
  • ¼ tsp Asafoetida / Hing
  • ¼ tsp Turmeric
  • Salt (as needed)
  • ½ cup Coriander Leaves

Instructions

  • Blend raw mango, coconut and green chili to a coarse paste (Just 1 or 2 pulses).
  • Make a fine powder of cumin, mustard and methi seeds.
  • Heat pan, add oil, mustard seeds and let crackle. add chana dal urad dal, curry leaves, and red chili.
  • In low-flame add peanuts and saute until light brown.
  • Add hing, turmeric and Mango-coconut mixture, and Saute for a minute or 2.
  • Add salt as per taste then prepared powder and coriander leaves. Mix well.
  • Refrigerate little prepared mixture for later use.
  • For the remaining mixture add in cooked rice and mix gently.
  • Enjoy this tangy & tasty mango rice !!!
