Seeraga Samba is aromatic, small-grain rice, which gets the name from its resemblance to cumin, which is known as seeragam or seera in Tamil Nadu, India. When cooked properly, Seeraga Samba rice grains are fluffy and loose.

Biryani is a traditional Indian one-pot dish, differs in taste and flavors all over India. This recipe calls for a simple, flavorful Chicken Biryani with Seeraga Samba Rice that adds a unique flavor to this dish.

Chicken Biryani | ಚಿಕನ್ ಬಿರಿಯಾನಿ with Seeraga Samba Rice | Instant Pot Recipe

Biryani is a traditional Indian one-pot dish, differs in taste and flavors all over India. This recipe calls for a simple, flavorful Chicken Biryani with Seeraga Samba rice that adds a unique flavor to this dish.

Ingredients

For Grinding Masala :

  • 1 Tomato (roughly chopped)
  • ½ cup Pudina/Mint

Whole Spices :

  • 3 inch Cinnamon Stick/Dalchini
  • 2 no. Bay Leaf
  • 2 no. Star Anise/Chakri Phool
  • 6 no. Cloves/Laung
  • 2 no. Cardamom/Elaichi Pods
  • 2 no. Kalpasi/Dagad Phool/Black Stone Flower
  • 1 tsp Fennel Seeds/Saunf

For Biryani :

  • 1 kg/2 lb Chicken (cut in med-size pieces)
  • 3 cups Seeraga Samba Rice
  • 3 Tbsp Oil
  • 2 tsp Ghee
  • 2 Large Onion (thinly sliced)
  • 6-8 Green Chili (sliced)
  • 1 Tbsp Ginger-Garlic paste
  • 2 tsp Garam Masala
  • 1 tsp Biryani Masala
  • ½ cup Pudina / Mint
  • 5 cups Water
  • Salt (as needed)

Instructions

PREPARATION :

  • Rinse chicken thoroughly with turmeric, salt & water. Strain and set aside.
  • Thinly slice onion and chilis.
  • Roughly chop tomato, mint leaves and blend to a smooth paste.
  • Rinse Seeraga Samba Rice thoroughly and soak for 15-20 mins.

INSTANT POT METHOD :

  • Turn on InstaPot to SAUTE mode. Once hot, add oil and ghee, add whole spices.
  • Add onion & a pinch of salt, saute until onions turn golden brown in color; stir occasionally.
  • Add ginger garlic paste, green chilis and saute for 1-2 mins, until the raw smell of paste goes off.
  • Add in Chicken and salt. Cook for 10 mins; stir occasionally.
  • Next, add Tomato-Mint paste, Garam Masala, Biryani Masala, fry for 1-2 mins.
  • Strain water from soaked rice and add Rice.
  • Add water(depends on the type of rice using). Mix well.
  • Top it with some more Mint leaves.
  • Close Lid of InstaPot and turn the valve to SEALING.
  • Press CANCEL button, turn on MANUAL mode(High-Pressure), Set timer to 5 minutes.
  • Wait for Natural Pressure Release(NPR) and open lid. **BE CAREFUL OF THE HOT STEAM**
  • Mix Rice gently and serve hot with raita.

INDIAN PRESSURE COOKER METHOD :

  • In a pressure cooker heat oil & ghee on medium flame, once it’s hot add whole spices.
  • Add onion & a pinch of salt, saute until onions turn golden brown in color; stir occasionally.
  • Add ginger garlic paste, green chilis and saute for 1-2 mins, until the raw smell of paste goes off.
  • Add in Chicken and salt. Cook for 10 mins; stir occasionally.
  • Next, add Tomato-Mint paste, Garam Masala, Biryani Masala, fry for 1-2 mins.
  • Strain water from soaked rice and add Rice.
  • Add water(depends on the type of rice using). Mix well.
  • Top it with some more Mint leaves.
  • Close the lid, with a whistle on it. Cook for 2 whistles and off the stove.
  • Once the pressure goes down, mix rice gently and serve hot with raita.
  • Mix Rice gently and serve hot with raita.

Notes

  1. While preparing Ginger Garlic paste use 40:60(Ginger: Garlic) Ratio.
  2. Using Seeraga samba rice gives a nice flavor to Biryani. You could use Basmati rice.
  3. The Rice-water proportion differs on the type of rice using. Seeraga Samba Rice: water proportion is usually 1:1¾ (with prior soaking)
  4. Adjust spice level according to your taste. This recipe is a med-spicy biryani.
  5. If the top portion of rice still looks uncooked after opening IP lid, just mix the biryani well and let sit in the hot pot with the lid closed for another 10-15 mins.
