Carrot beans palya/poriyal is a simple, healthy and delicious South Indian recipe that can be served as side dish for rice, sambar, roti/chapathi.

Ingredients

  • 4 cup Carrot (finely chopped)
  • 3 cup Beans (finely chopped)
  • ¼ cup Grated Coconut
  • 3-4 Green Chili
  • 1 tsp Jeera / Cumin
  • 2 tsp Oil
  • ½ tsp Mustard Seeds
  • ½ tsp Chana Dal
  • ½ tsp Urad dal
  • few Curry Leaves
  • ¼ tsp Asafoetida / Hing
  • 2 broken Red Chili
  • Salt (as needed)
  • ½ cup Coriander leaves

Instructions

  • Blend coconut, green chili, and jeera to a coarse paste: set aside.
  • Take a thick bottom pan (I am using my favorite cast-iron skillet)add oil, Mustard, Chana dal, Urad dal and saute till they change color. Add curry leaves and hing.
  • Now add beans, carrot, and salt. Sauté for a minute. Close lid and cook on a low-med flame, till vegetables, are tender. Stir in between.
  • Add the ground mixture and sauté for 1-2 minutes.
  • Now add the chopped coriander leaves and mix well.
  • Stir fry is ready to relish!!

Notes

  • Chop carrot and beans very fine.
  • Do not overcook vegetable.
  • Use cast iron skillet for increased health benefits.
