Beetroot is very low in calories, with just 0.2g of fat which turns out to be an excellent food for weight loss. So here is a delicious- healthy south Indian recipe, RASAM with beetroot twist.

Ingredients

  • 1 Beetroot (peeled & roughly chopped)
  • ¼ cup Toor Dal
  • 4-6 Garlic cloves
  • ¼ tsp Turmeric
  • ½ cup Tamarind Extract
  • Coriander Leaves (chopped)
  • 6 cups water (adjust as per consistency)

For Grinding Spices :

  • 1 tsp Pepper Corns
  • 2 tsp Jeera/Cumin

For Tempering:

  • 1 tsp Oil/Ghee
  • ½ tsp Mustard seeds
  • 2 Dry Red Chili (broken)
  • few Curry Leaves
  • ¼ tsp Asafoetida

Instructions

  • In a Pressure cooker, add 4 cups water, washed toor dal, beetroot, garlic, and turmeric. Cook for 1-2 whistles till dal is mushy.
  • Blend the dal and beets well. You can also pulse it in a mixie once cooled.
  • Add Tamarind extract, prepared rasam powder, coriander leaves, salt and 2 cups water for the consistency required.
  • Boil on a low-flame until white froth appears on top and switch off the flame immediately.
  • For tempering, heat oil or ghee in a Kadai, splutter the mustard seeds, curry leaves, dry red chilly and asafoetida.
  • Add the tempering to rasam and mix well.
  • Delicious and Healthy Beetroot rasam is ready to be Served
  • Serve Rasam with steamed rice and papad or have it as a Soup 🙂

Notes

  • You could use store-bought Rasam powder too.
  • While making Rasam powder at home, add a dry red chili and ½ tsp coriander seeds for extra flavor and taste, along with peppercorns and jeera.
  • Do not over boil any Rasam. Boil on a low-flame until white froth appears on top and switch off the flame immediately. 
  • Beetroot Rasam could be served as a soup too.
