Barley Vegetable Soup – Instant Pot

Barley is a cereal grain with a chewy texture and mild, nutty flavor. It is a very healthy grain, rich in vitamins, minerals and high in fiber, which may help in reducing cholesterol and blood sugar levels. It may also aid weight loss and improve digestion.
Barley can be used as a whole-grain(Hulled Barley) or Processed form(Pearled Barley). Whole-grain, Hulled Barley is more nutritious than refined, Pearled Barley, as it is the least processed version of barley.

There are various forms of processed barley available in the market today. Few to name are Barley Flakes (Like the rolled oats), Barley Flour (ground pearled barley), Barley Grits (small pieces of barley), etc.
Barley is a versatile grain that can be substituted for any other whole grain in salads, side dishes, soups, and can be easily added to our diet.

Here is a simple and delicious soup recipe in Instant Pot, loaded with veggies and addition of barley, makes it even more nutritious, healthy and cooked to perfection with IP Soup mode. This can be considered as a one-pot meal, which makes comfort food for lunch or dinner. Also versatile enough to add in veggies of your choice or even meat and still tastes delicious. Make your own variation and enjoy this filling, comforting and healthy soup!
Barley Vegetable Soup | ಬಾರ್ಲಿ ತರಕಾರಿ ಸೂಪ್ | Instant Pot Recipe
Ingredients
- ½ cup Pearl Barley
- 1 Tbsp Butter
- 2 Garlic cloves minced
- 1 cup Carrot finely chopped
- 1 cup Broccoli small florets
- 1 cup Sweet Corn
- 4 cups Water
- Salt & Pepper to taste
- ¼ cup Green Onion to garnish
Instructions
PREPARATION :
- Rinse ½ cup barley thoroughly and soak in water for 1-2 hours or preferably overnight.
- Finely chop the carrots (i have used Rainbow carrots to make the soup more colorful) and chop broccoli to small florets.
- Mince the garlic cloves.
INSTANT POT METHOD :
- Turn on InstaPot to SAUTE mode. Once hot, add butter, minced garlic, and saute for a minute.
- Add in the chopped veggies and saute for 2-3 mins.
- Add salt and pepper as needed.
- Next, add the soaked barley(discard the soaked water) and 4 cups water/vegetable broth. Mix well.
- Close Lid of InstaPot and turn the valve to SEALING.
- Press the CANCEL button and click on SOUP. The ‘SOUP’ button cooks at High Pressure for 30 minutes.
- Wait for Natural Pressure Release(NPR) and open lid. **BE CAREFUL OF THE HOT STEAM**
- Garnish with Green onion and serve hot/warm with the bread of your choice.

Notes
- This is my basic go-to recipe, though I often switch it up depending on which vegetables I have at the preparing time. Add vegetables of your choice and it will still taste delicious.
- Other choices of vegetables can be mushrooms, spinach, celery, zucchini, beans or even chicken for extra protein.
- Replace water with the vegetable/chicken broth if available. You could also replace butter with olive oil for this recipe.
- If you are gluten-free, omit barley and add brown rice in place.
- Add in few spices like jeera powder/ Italian herbs and paprika to enhance the flavor.
